Slow Roasted Tomato Basil Soup

One of my very favorite foodie bloggers is

Cathy from Wives With Knives.

She shares some of the most flavorful & interesting recipes

and she takes FABULOUS photos of the finished dish, too.

She has inspired me so many times to try new recipes.

Because every year, my sweet hubby grows TONS of

tomato plants from SEED...

We have LOTS of Fresh TOMATOES to eat!

Needless to say, I am always looking for

ways to use up tomatoes.

I have adapted her recipe to

accommodate our health issues here at

The Gazebo House

by lowering the salt as well as the fat content.

The flavor is still WONDERFUL!!

You'll never again enjoy canned tomato soup

once you try this homemade version.

Every time I serve it to friends & family

it gets rave reviews!

  6. Rett, I'm not a fan of tomatoes, but I do love tomato soup. Odd, but true. This looks delicious. Love the pretty cabbage leaf dishes and the combo of green and pink. Perfect spring lunch. ~ Sarah

    Homemade soup is always better than canned. Thanks for the lovely recipe. my husband loves tomato soup, especially with grilled cheese sandwich.
    I hope to grow some tomatoes this year.

  8. It sounds delicious and looks yummy. My hubby also has a large garden of tomatoes that he, too, starts from seeds. I like to freeze them chopped up and in cupcake tins. When they are frozen I dump them into a large bag and have fresh tomatoes for use all winter. Each one is about 1/2 cup.

      Thanks for the tip about freezing chopped up tomatoes in cupcake tins! Wonderful idea & I'm sure I'll use it come summer this year. DH has a bumper crop of seedlings already started in the sunroom!
