With an over abundance of cucumbers this summer,
and LOTS of fresh dill, still growing in the garden,
I tried Mary's recipe
(from One Perfect Bite)
for
Mary didn't peel her cucumbers but
I was anxious to try out my new Titan peelers,
which I absolutely ♥♥♥!
I found them at Bed, Bath & Beyond.
These things are soooo wickedly sharp,
DH says he could perform surgery with them!
You can even do julienne strips & decorative scoring with one of them.
I didn't take off ALL the green,
just strips of it all around.
I have made cucumbers in vinegar before &
I have made cucumbers in sour cream, too
but this is the best of both worlds.

Be sure to prepare it in the morning
so the flavors can play awhile together
before supper time.
Oh & don't leave out the celery seed...
It makes a world of difference in the taste!

ReplyDeleteI tip my hat to you, if you mastered those peelers. I had them for awhile -- and never was able to do anything but score veggies with them. They just plain didn't work for me. Well, OK, I juust plain didn't work for THEM. I got rid of mine, and went to some regulation OXO peelers that I can handle!
I was wondering what to do with some fresh dill I have ... and now I know. Thank you! I love cukes.

I'm not a huge cucumber fan, but I do enjoy them fir a change every now and then. Never tried this salad, but it looks very healthy and refreshening. You are making me hungry with your mouthwatering pictures! Thanks for being kind enough to pass along the link.

One of my favorite salads, Rett. My mother always served this with grilled salmon and I still love the combination of flavors. Nice peelers. Would love one that does julienne strips.
